Was taking to Ritchie yesterday about the Pizza thing.
Ooni needs a thin base and not much topping. Less the better.
Thick layers of tomato topping sause, too much cheese especially gobs of wet mozzarella balls will cause the base not to cook.
The surrounding edges will catch fire before the centre is anywhere near cooked.
Reduce the topping to a minimum and just eat moređ
You can have thick toppings with a regular lower temperature oven and have them in for longer. You canât recreate that with an Ooni. At least not the woodburner one.
Ooni can easily top 300°C (off the scale on my infrared temp gun), so it is easy to burn before cooked.
Up to 30secs in, half turn, upto 30secs again. Done.
Impossible even with a steam roller to get the dough anything like thin this year - whatever went on with that dough was magnificent trolling - Italy hates Lopwell

It was the dough.
Just the dough. As we pointed out, we had the same people and dough at Settle and they were spot on.
We just fried bread in a wok instead and had sandwich pizza.
Thatâs all true, well and good but it doesnât sound like they got to this stage.
The dough was just too wet and sticky. It was impossible to stretch properly.
The only pizza that even approached being right was one that was absolutely covered in loads of flour, and even that was a nightmare to get off the peel into the oven.
Apparently the dough balls should have been defrosted in their bags, but I donât remember doing that at Settle and they were great.
Interesting.
The dough is the easy bit for me.
Ingredients
For the dough
500g flour (or strong white flour), plus extra for dusting
Sachet of dried easy-blend yeast
2 tsp salt
25ml/1fl oz olive oil
300ml/11fl oz warm water
Make 8 Ooni size pizza rounds.
I use white spelt instead of white flour and rice flour for dusting.
Mix well, leave for 1.5 - 2hrs. Roll out etc
