We have quite a few spare places now - does anyone else want to come along, either for the weekend or (if you are fairly local) for a day?

I have a very good smokery, a couple of miles away.
I can bring a side or two of smoked salmon, either hot smoked, cooked, or cold smoked.
They are wholesale only, but I used to work for them, so they will sell me whole sides, if you want them.
The cold smoked will come either long sliced or d sliced.
I can get costs, if you are interested.

We used to smoke almost anything, but now it is mostly salmon, hot and cold, hot smoked duck breasts and chicken breasts, and maybe a few things for a special.

In my youth my dad knew people at Forman & Son, and could get whole sides at cost price. My mother still has (and was just talking to me about) the smoked salmon knife she has had since the 1960s

They started out hand slicing everything, but got too busy, and bought an electric circular slicer, and they now use a machine, that does it automatically.

I was asking because smoking salmon takes about 90 minutes whenever I’ve done it on the Weber kettle.

Was thinking for Saturday lunch time because last year, my lunch was just crisps and I felt hungover by evening time as a result, different option.
