An excellent strategy, loose the battle to win the subterranean sound lab war.
I find that either doing tomato concasse or halved cherry tomatoes with the curve on the bottom really helps reduce the fluid issues.
Late reply, but I don’t read this thread often. Detroit pizza is my current obsession. That crispy cheese at the edges is gold baby

I love rectangular pizzas, mix of crust slices and all topping slices. A New York grandma style pizza, baked on a rectangular sheet pan with lots of olive oil so the crust bottom is fried, is another good pizza to try
